Light and flavorful, enjoy a cookie with a burst of flavor and color! With ruby cranberries and green pistachios, these cookies are a host’s best friend and a must bake for your next holiday party or cookie exchange.
- 6 ounces Fond O’ Foods German Butter
Butter should be at room temperature
- 1/4 cup plus 2 tablespoons sugar
- 1/2 cup pistachios, lightly chopped
- 1/3 cup of dried cranberries
- 1 1/2 cups all purpose flour
- 1/4 teaspoon salt
Preheat oven 325 degrees.
Line cookie sheets with parchment paper.
Soft flour and salt, set aside.
Beat butter until creamy then add sugar and beat until light and fluffy.
Add flour mixture and beat just until incorporated. Stir in nuts and cranberries.
Take he batter out of the bowl and form a couple of logs about 1 1/2 inches in diameter.
Wrap in plastic wrap and refrigerate about an hour.
Cut cookies from the logs about 1/2 inch thick and place on cookie sheets.
Bake about 20 minutes or until the edges of the cookies just turn slightly golden in color.
Store in a cookie jar or freeze in your freezer.
