Light, buttery, sweet and moist, this luscious almond cake is a crowd pleaser. Sprinkle slices of almonds on top and serve with fresh berries and whipped cream for a perfecting pairing.


  • 8 ounces almond paste
  • 1 cup sugar
  • 8 ounces Fond O’ Foods German Butter
    Butter should be at room temperature
  • 1 teaspoon vanilla extract
  • 6 large eggs
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Preheat oven 325 degrees.

Step 1
Butter and flour a 10 inch cake pan with 3 inch sides.

Step 2
Process the almond paste with the sugar in a food processor until the almond paste is in fine pieces and set aside.

Step 3
Sift the flour, baking powder and salt together, stir and set aside.

Step 4
Beat the butter until creamy and then add the almond paste mixture and beat until light and fluffy.

Step 5
Add the eggs one at a time and beat until well incorporated.

Step 6
Add in the flour mixture and beat just until incorporated.

Step 7
Spread the cake batter evenly into the 10 inch cake pan.

Step 8
Bake for 1 hour to 1 and 1/4 hours or until the cake springs back when gently touched.

Step 9
Cool cake then take out of pan and you can serve it as is or with the addition of fresh berries and whipped cream.
